The grapes are softly squeezed in order to avoid laceration to the skin and flesh,
which gives a delicate quality to the wine.
Fermentation is carried out in stainless steel containers at controlled temperatures.
Refining and ageing take place in air conditioned cellars.
Colour: intense red with violet highlights.
Bouquet: distinctively fruity, bringing to mind black fruits of the forest with spicy and chocolate notes.
Palate: agreeable and long-lasting with soft tannins, a good structure and persistence.

It is unanimously considered the "prince" of wines from Trentino.
It shares some biochemical characteristics with Marzemino. A fundamental characteristic of this variety is to grow and give its best only in the Rotaliana plain, formed by the alluvium of the River Noce.
Colour: red ruby with purple.
Aroma: Intense fruity reminiscent of blackberries and blueberries.
Taste: full, warm, round smoothness.

The Marzemino grape occupies a prominent place in Trentino's wine culture.
The origins of the vine are lost in history but it is likely to be native from Marzemin, a village in Carinthia. Currently Marzemino is cultivated in particular on the right bank of the river Adige.
Colour: brilliant ruby red.
Bouquet: delicately fruity, bringing to mind fruits of the forest and sweet violet.
Palate: dry, harmonious, balanced, pleasing for its fruity notes and slight almond finish.

This grape, almost certainly originally from South Tyrol and also called Gewürztraminer, is one of the great aromatic varieties which requires hilly terrain and full sunlight in order to grow.
Cantine Monfort’s vineyards are located in Valsugana valley, near Cirè di Pergine.
Colour: pale yellow tending towards golden.
Bouquet: intensely aromatic and spicy with a hint of rose and yellow peach.
Palate: warm, soft and balanced with a persistent finish and a great body.

In Trentino it is cultivated only in particularly suitable areas where this frafile varietal can give its best.

Rinaldi’s 2003 Barolo Brunate/Le Coste is deeply flavored and intense, with more than enough fruit to balance its tannic structure. The characteristic balsamic notes that are typical of this wine literally jump out of the glass. This seriously long and powerful Barolo is also remarkably accessible and is a great introduction to one of Piedmont’s great wines. When tasted separately the different qualities of the two vineyards are striking. Brunate provides the muscle and complexity, while Le Coste gives the wine a measure of softness.
