4 large pink grapefruits
12 thin slices bresaola, julienned
1⁄4 head green leaf lettuce,
chopped
1 bunch arugula , chopped
1 lemon, juice only
1⁄4 c. extra-virgin olive oil
salt and freshly ground pepper

1. Slice off the top 1⁄2-inch of each fruit. Using a paring knife, carefully cut around the inside of the fruit to separate the pulp from the skin. 2. Using a spoon, scoop out the pulp to create a hollow shell. Scrape out any remaining contents from the shell and set the grapefruit cups aside. 3. Remove any white pith, cut the pulp into pieces and transfer to a large serving bowl along with any juice that accumulates. Add the bresaola, lettuce and arugula. 4. In a small bowl, whisk together the lemon juice, olive oil, salt and freshly ground pepper. Pour it over the salad and toss well to coat. 5. Fill each grapefruit cup with the salad and serve immediately. Serves 4

Replace: bresaola with prosciutto

A light to medium-bodied white wine, such as Pinot Grigio

Tomatoes should be stored at room temperature. Placing them in the refrigerator will hasten the ripening process and ruin its flavor. Also, if stored with bananas, both fruits will ripen quicker. Tomatoes should be placed in a paper bag on your counter if they need to ripen faster.

1⁄2 lb. fresh mozzarella
3 tomatoes, thinly sliced
salt and freshly ground pepper
extra-virgin olive oil for drizzling
basil leaves for garnish

1. Place the mozzarella in the freezer for about 15 minutes, then slice thinly, about the same size as the tomatoes. 2. Arrange the tomatoes and mozzarella on a large platter, alternating a slice of mozzarella for every 1 or 2 slices of tomato in an overlapping pattern. 3. Season with salt and freshly ground pepper. Drizzle with olive oil and garnish with basil leaves. Serve immediately or refrigerate, covered, until ready to use. Bring to room temperature before serving. Serves 4

In Italian, spumante means sparkling, frothy or foamy and is used to describe fully sparkling wines. Semi-sparkling wines are referred to as frizzante and are made using less CO2 pressure, which creates smaller bubbles.
